THE MODERN BLACK FOREST CAKE! A SPECIAL COLLABORATION OF AAA CLUB-BING WITH ENDERUN’S ECOLE DUCASSE AND MASTER CHEF LAETITIA MOREAU

May 28 was an exciting day for the AAA Cooking and Baking Club! The much anticipated baking class with our special partner, Ecole Ducasse of Enderun Philippines was a landmark event for us. It was extra exciting because it was our first hybrid class! We actually met each other face to face in Enderun’s state or the art ampitheater! There was a zoom link for online access too! There was much chatter and excitement as we greeted each other live, a giant step for many of us who had been quarantined and bubbled for the longest time!
Chef Laetitia Moreau, our much bemedaled instructor, is the Executive Pastry Chef of Enderun Philippines’ Ecole Ducasse. She came in 3rd in an international baking contest akin to the Olympics of the baking world. What a privilege and honor to have her as our teacher! By the end of the session, she had a fan club among us in the AAA Cooking and Baking Club!
Some of us joined the live face to face class in Enderun’s state or the art amphitheater. A light as air heavenly chocolate mousse covers the entire cake. Chef Laetitia sent us samples of the mousse while she was assembling the cake. Heavenly!
The highlight of the class was tasting that drop-dead gorgeous cake! At the foyer, we were treated to coffee concoctions whipped up by Enderun Philippines Ecole Ducasse students and slices of the Modern Black Forest Cake! What can I say? Only decorum stopped me from grabbing a second slice. All the components of the cake came together in glorious culinary harmony. I can’t wait to make my own!
Enderun Philippines feted us all the way! We were awarded certificates from the much coveted Ecole Ducasse, a culinary stalwart of international fame that has trotted out some of the most renown and multi-awarded chefs globally. They also treated us to a raffle and Sonjie Trillana and Roberta “Tab” Abad Estacion were lucky winners of discounts to the certificate culinary courses of Enderun. They also gifted all the attendees with a Php 2000 discount to a special lifestyle baking session featuring Matcha Ciabatta and a Charcuterie spread with Chef Laetitia Moreau. I am so looking forward to enrolling for that session!
